Scarletta fresh Mafalde ribbons are made with free-range eggs and semolina flour. Also known as Reginette or Mafaldine.
It’s flat and wide with wavy edges on both sides. It is prepared similarly to other ribbon-based pasta such as
Papadelle and fettuccine.
